Week 24: Fancy pasta

 Cappellini Pomodoro

This is a tried and true family favorite.
It is so simple and these 4 main ingredients taste ah-mazing.



1 cloves garlic, minced
1 pounds plum tomatoes, seeded and diced
1/2 ounce fresh basil leaves, minced
1/6 cup extra-virgin olive oil
1 1/2 ounces Parmesan cheese
6 ounces dry angel hair pasta, cooked (I used spaghetti sometimes)
1/8 teaspoon pepper

Heat olive oil and add garlic. Cook until garlic turns white.

Add tomatoes and pepper. Heat through, stirring constantly, about 2 to 3 minutes. Tomatoes should not lose their shape.

Remove from heat. Transfer hot, cooked pasta to large bowl. Toss pasta gently with tomato mixture, basil and half of Parmesan cheese.

Serve immediately with the remaining Parmesan.

Rating: 5. This never disappoints. So simple yet delicious.
